On a train ride from London to Paris in the summer of 1985, Christopher Leach discovered the wonderful world of European charcuterie. The salami he tasted on that ride had a much bolder flavor than any Leach had experienced in the U.S.A.
Determined to bring these rich flavor profiles to America, Leach retired from his career as a professional cellist, and founded The Beautiful Pig in 2012. Using the best meat, spices, and wines available, he created 12 original recipes for salami inspired by his European travels.
