For over a decade, we’ve been making delicious gyros for the Vancouver and Portland area. However, we didn’t always have gyros. Elayne Barlas, the founder of Pop-A-Bak, started selling Greek baklava at the Vancouver Farmers Market in 2004. After a few years of selling baklava and various other Greek pastries, gyros were eventually added to the menu. One thing led to another and we were soon involved in multiple Vancouver and Portland-based markets. While we continue to support our local farmers markets, we are now proudly operating as a food truck for catering and events, a permanent food trailer, and soon a brand-new restaurant! Unfortunately, Elayne is no longer with us, but her husband, Harry Barlas, and their children — Brianna, Philip, and Adam — continue to carry forward her business dream with her in their hearts.
